No, I mean a client user manual that one should/would get with the client
software. Something like an Excel Users Manual. I'm not interested in
buying a manual off the shelf. This is for an Exchange deployment project,
I need user documentation for my not so computer orienteed users and I
can't come up with any.

In the Sample Applications that come with Exchange, they include an
application called the 'Getting Started Guide' that is really no more than
a bunch of postings with a view that organizes it as a manual. While it
does not include everything, we have found it useful in our deployment of
Exchange.

Actually,
There is an excellent one from QUE.
It is called "The 10 Minute Guide to Exchange"
It really is 10 minutes ----- per chapter
There are a couple of dozen chapters.
It's cheap enough and small enough to hand out.
