Does Exchange 2003 have the ability to connect exchange servers in a
different Forest, or do still have to maintain a 5.5 bridgehead?

Sure, just as they can connect to any other SMTP server.

Whatever you were doing between the two 5.5 Exchange organizations is
what you should continue to do with Exchange 2000. But there's no need
stick with 5.5.

Please clarify the "different forest" topology. Are you running a
single Exchange 5.5 organization that spans several NT Domains? That's
not the same thing as running E2K in different forests, it's the
equivilant of running multile Exchange 5.5 organizations.

1. Exchange2003

Will Exchange 2003 allow users to use the "Send AS"
feature from another non default mailbox?  We currently
use Exchange 5.5, and it does not allow us to use that
feature.  If you reply form another non default mailbox,
it still uses your default mailbox to send the message.  
Did that make any sense?
