I'm wondering if there are any "printer drivers" which output postscrpt files.  I would like to print some things out on the laser printer at my office and    
something like this would be very handy to have.

There are two PostScript interpreters for Amiga that I know of: Post and
Ghostscript.  Ghostscript is a port of a Unix program.  I know nothing
about this, except that it is available on Aminet.

Post (latest version is 1.86_enh, also available on Aminet) comes with
post.library (including 68000 and 68020+ versions) and a front-end for
viewing a PS file on the screen or printing or saving as an IFF.  Also
included is postlj, which uses post.library and prints to an HP LaserJet.

Neither is easy to set up, and you need to provide the fonts as well.
