Is there a simple way to get a key label in black instead of in the color
of the line it describes?

Depends entirely on the terminal driver you're using.  See its
documentation.

1. Key labeling *and* Color PostScript

First, use the "title" option on the "plot" command:
  plot "filename.txt" using 1:2 title "Speed", "" u 1:3 t "Torque"

BTW, since speed and torque have different units, have you considered
plotting one of these against the right-hand axis?
  set y2tics
  set ytics nomirror
  set ylabel "Speed"
  set y2label "Torque"
  plot "filename.txt" u 1:2 title "Speed", "" u 1:3 axis y2x1 t "Torque"

For your second question, yes, color is possible with PostScript:
