I'm sure I saw an option/command to do this, but can't find it now !
Is there a way of outputting the plotted data into a file ?
I have a 'smoothed' plot, and I need the 'smoothed' data values
in a separate file. Any help would be appreciated.

Use 'set term table', and then 'set output file.dat'. This will give you
a file containing data points that would otherwise be plotted. If you're
looking for the actual coefficients of the spline curves, you're out of
luck. I ended up having to hack the source to get these for one of my
projects.
