I am currently involved in a college course on the use of Unix.  I have
one question for you experts:

We learned how to send e-mail in which the header had been manipulated.
That was simply by typing false text into a pico document and then using
the sendmail command to send the contents of that document to someone.

We learned a second technique which I don't quite understand.  We were
taught to telnet into a server, and then to type HELO followed by a

But my problem is that I cannot then type anything.  It acknowledges the
previous two steps but then won't let me create a body to the message.

Please advise me.
Thank you!

Did you type in the DATA command?

See http://www.faqs.org/rfcs/rfc821.html for the official protocol spec.

It would probably be nicer with a blank line between the last header line
(Subj:) and the beginning of the message text. Otherwise MUAs will get very
confused.
