Any URLs or docs on the following is highly appreciated :

1) Linux as an internet gateway for a 2M (VHF) Radio network.
2) Basically any info on HAM Radio & Linux.

Try http://sunsite.unc.edu/pub/Linux/apps/ham, there is a HAM-HOWTO in
the doc
directory there also.
