Has anyone seen, demo'd, or currently using VERITAS?
It is advertised as a software RAID product and filesystem management
tool.  Any help or info would be greatly appreciated.

If you buy the SPARCstorage Array from Sun, you get VERITAS' Volume
Manager (which is what you are talking about).  However it is crippled
to only work w/ the array unless you buy the full package from veritas
(which is just getting a new pw key).

It runs great.  The GUI is so easy to use.  We have students who eat
disk like candy, so we need to grow filesystems daily.  So all we do
is click on the volume icon.  Select resize from the menu and ask it
to grow bigger by 10mb or whatever and it does it live and hot!

The RAID works good as well.  We are now moving all of our volumes to
RAID5.  It's cool!
