Below is the all the info logged when i start pppd as a normal user:

It's not much but that's all that gets logged.
Also.....i've included the command i use to connect:
pppd connect 'chat -v "" ATDT12345 CONNECT "" ' /dev/ttyS1 crtscts
115200 noipdefault defaultroute noauth
The server requires PAP authentication but i've catered for that.
