I would like to have 2 consoles running xdm or kdm when I boot up my
machine. I have tried editing the files /etc/X11/xdm/xdm-config and
/etc/X11/xdm/Xservers but I haven't had any luck yet. I would greatly
appreciate knowing the exact changes to make to the files in
/etc/X11/xdm/ or wherever else is necessary. I am assuming this is not
server dependent, and in fact, I may run both MetroX and Accelerated-X
from time to time. I have a RedHat 5.1 system that is currently
correctly configured to execute kdm on virtual console 7 at startup.

You were almost there.
Edit /etc/X11/xdm/Xservers (for XFree86):

:0 local /usr/X11R6/bin/X vt7
:1 local /usr/X11R6/bin/X vt8

and restart your xdm/kdm.
