The question I have deals with table space allocations within a tablespace.

Lets say I have a tablespace allocated with 3 datafiles of 100M each (total
of 300 M). I have found that if I have a table whose primary allocation is
120M, I'll have problems because the primary size is greater than one of the
datafiles. So I have determined that the primary space must be held within
a single datafile.

My main question is, for a given table, that goes into multiple
extents, can those extents be in different datafiles within the tablespace ?

Yes. Oracle treats the tablespace as one logical entity, while it may
physically span 1 or more datafiles.

Yes. But note that no single extent can span multiple files.

Use the ALTER TABLE command and allocate another extent in a specific
datafile. This way if the table is 120 Meg, you can allocate 3 extents of 40
Meg each and guarantee that it will be spread. Of course, if the Database is
7.3, you can do a 'CREATE TABLE ... STORAGE (INITIAL 40M NEXT 40M
PCTINCREASE 0) PARALLEL 3 AS SELECT * FROM ... and it will stripe the table
for you.
