I would like to quickly switch between two different
config files for the 3640, during the installation of
a replacement server. I could manually reprogram
the two affected interfaces each time, but is there an
easier way using two files somehow ?

You could set both files up on a tftp server and load the file whenever you
want automatically

Thanks ! What are the pertinent IOS commands I would have
to use ?
